  1. lots of preferences here... and having marbling in your steak may taste better to you... but that just isn't the case for me. USDA choice (the 'dog food') is clearly the best cut of the three....

  2. Great post. Knew most if this from studying this kind of food science at seriouseats.com's Food Lab series (highly recommend this site; for true cooking enthusiasts), but it's worth shouting from the mountains to keep from ever getting served dry crappy steak at a friends house.
